Ambrosia Pound Cake

 

Ambrosia Pound Cake

1 (18 1/2 oz.) pkg. orange cake mix
4 eggs, room temperature
1 cup of water
1/2 teaspoon of cinnamon
1 (3 3/4 oz.) pkg. lemon instant pudding
1/2 teaspoon of nutmeg
1/3 cup of oil
1 1/3 cup of  mashed ripe bananas
Powdered sugar frosting 

Combine all ingredients in large bowl. Mix until blended and then beat at medium speed for 4 minutes. Turn batter into greased and lightly floured 10 inch bundt pan or 10 inch tube pan. Bake at 350ºF.  for 1 hour or until cake tester comes out clean. Cool in pan 10 minutes. Turn out onto rack and cool completely. Let powdered sugar frosting run in streaks down sides of cake. Lightly frost top and press some coconut into it. An attractive seasonal touch is to decorate with slices of candied cherries and green "leaves" cut from gum drops.
