Bleu Cheese Mushrooms
1 pound of mushrooms, 1 to 1 1/2 inches in diameter
1/4 cup of green onion slices
2 tablespoons of butter or margarine
1 cup (4 ounces) of bleu cheese, crumbled
1 small package (3 ounces) of cream cheese
Remove stems from mushrooms; chop stems. Sauté stems and green onions in
margarine until soft. Combine with cheeses, mixing well. Stuff mixture into
mushroom caps. Place on a broiler pan rack and broil for 2 to 3 minutes or
until golden brow. Serve hot. Makes 15 to 20 appetizers.
