Broiled Chicken Liver Roll-Ups
2 cans of water chestnuts
1 pound of chicken livers
1/2 pound of bacon, each slice cut into thirds
1 bottle of soy sauce
1/2 cup of brown sugar
Drain water chestnuts and cut each one into 3 pieces. Wrap each cut water
chestnut with a small piece of chicken liver and bacon piece. Secure with a
toothpick and marinate in soy sauce for at least 4 hours. Just before
serving, remove roll-ups from soy sauce and roll each in brown sugar. Place
on broiler rack and broil for about 10 minutes or until crisp. Serve at
once. Makes about 18 roll-ups.
