Raspberry Stuffed French Toast w/Blackberry Syrup

2 ounces of Neufchatel Cheese, softened
1/2 cup of fat free sour cream
1/4 cup of sugar
1/4 teaspoon of lemon extract
3 eggs
1/4 cup of half and half
3/4 cup of water
16 slices of French bread
1 cup of raspberries
2 tablespoons of MILLCROFT FSARMS COMPANY Blackberry Syrup

In a small bowl, blend Neufchatel cheese, sour cream, sugar and lemon extract. Set aside. In a glass measuring cup, whisk eggs with half and half and water. Pour 1/2 of the egg mixture into a buttered casserole dish. Place 8 slices of bread in casserole dish. Spread cheese mixture evenly over bread. Sprinkle with raspberries and drizzle with blackberry syrup. Top with the remaining bread and pour remaining egg mixture over top. Bake in a preheated 350ºF oven for 20 minutes. Cool slightly before serving. Can be made ahead and heated in a microwave oven. Serves 4
