Rolled Sandwiches
1 loaf of bread, sliced into length-wise slices
Filling:
1/4 pound (1 stick) of butter, softened
4 ounces of cream cheese
1/4 teaspoon of paprika
1/4 teaspoon of salt
1 tablespoon of mayonnaise
3/4 cup of minced nuts, raisins, dates, and/or figs
Combine filling ingredients well. Slice crusts from long pieces of bread.
Spread fill onto bread slices. Roll up from narrow ends. (Before rolling,
strips of sweet pickles or olives may be placed over filling for colorful
variations). Press end of roll firmly, and wrap each roll tightly in plastic
wrap. Store in refrigerator overnight. Before serving, slice each roll into
1-inch slices. arrange on serving plate. NOTE: Instead of the nuts and dried
fruit filling, try one of the following: 1 1/2 cups of tuna salad, crab,
shrimp, salmon, finely chopped raw vegetables, grated cheddar cheese,
chicken, turkey, or ham filling. Makes 25-30. |
