Shrimp Puffers
8 tablespoons of softened butter or margarine
2 eggs, separated
3 cups of shredded sharp cheddar cheese
15 slices of white bread
(thin-sliced)
60 cooked shrimp, shelled and deveined
Blend butter, cheese, and egg yolk until smooth. Beat egg whites until
stiff; fold into cheese mixture. Trim crusts from the bread; cut each slice
into quarters diagonally. Top each slice with a shrimp and 1 teaspoon of the
cheese mixture. Bake in a preheated 350ºF. oven on lightly greased cookie
sheets for about 15 minutes, or until puffy and golden. Make about 60
appetizers. |
