Apricot Muffins

2 cups of self-rising flour 
1/2 cup of sugar 
1/2 cup of  chopped dried apricots 
2/3 of cup milk 
1/3 cup of butter or margarine, melted, cooled 
1/2 teaspoon of  vanilla 
1 egg 



Heat oven to 425ºF.  Grease 12 muffin cups. In medium bowl, combine flour and sugar; mix well. Stir in apricots. In medium bowl, combine milk, melted butter, vanilla and egg; blend well. Add to flour mixture; stir just until dry ingredients are moistened. (Batter will be slightly lumpy.) Fill greased muffin cups 2/3 full. Bake at 425ºF  for 15 to 18 minutes or until golden brown. Serve warm. 12 muffins
