Apricot Puree Gateau 

2 yellow cake layers
2 jars of junior baby food apricots
3 cups of whipped cream
1/2 cup of chopped walnuts
drained apricot halves



Split the cake layers in half crosswise. Place 1 layer of the cake on serving plate, then spread 1 jar of the apricots over top. Combine half the whipped cream and the walnuts and spread half of the walnut mixture over the apricots. Add another cake layer, then spread with the remaining walnut mixture. Cover with the remaining layer. Frost the side with the remaining whipped cream. Chill for at least 3 hours, then cover top with the apricot halves. Serve immediately.
