| Banana Coffee Cake
Batter 1 stick of margarine 3 large bananas, mashed 1 egg white, whipped 1 tablespoon of lemon peel, grated 1 teaspoon of vanilla 1/2 cup of skim milk; at room temp 2 cups of unbleached flour 3/4 cup of granulated sugar 1/4 teaspoon of salt 1 tablespoon of baking powder topping 1/3 cup of brown sugar, packed 1/3 cup of unbleached flour 3/4 teaspoon of cinnamon |

Preheat oven at 375ºF. Prepare Springform Pan, with cooking spray and flour. To prepare batter, in a mixing bowl, combine margarine, bananas, egg white, lemon peel, vanilla, and milk. In another mixing bowl, combine flour, sugar, salt, and baking powder. Mix wet ingredients with dry ingredients just until moistened. Pour batter into prepared pan. Meanwhile, to prepare topping, combine brown sugar, flour, and cinnamon. Sprinkle topping over batter. Bake for 45 to 50 minutes.
