Banana Cupcakes

3/4 cup of all-purpose flour 1 1/2 teaspoons of baking powder 3/4 cup of sugar 3/4 teaspoon of ground cinnamon 1/2 cup of egg substitute 3 tablespoons of water 1 tablespoon of vegetable oil 1 teaspoon of vanilla extract 1 medium banana, mashed Powdered sugar |
| Place paper baking cups in muffin pan, and coat with vegetable cooking spray. Combine flour and next 3 ingredients in a large bowl. Whisk together egg substitute and next 3 ingredients. Stir in banana. Add to dry ingredients, stirring just until moistened. Spoon into baking cups, filling two-thirds full. Bake at 350ºF. for 25 minutes or until a wooden pick inserted in center comes out clean. Remove from pans immediately, and cool on a wire rack. Dust with powdered sugar.
