| Banana Apricot Bread
2 cups of sifted all-purpose flour 1 cup of sugar 1 teaspoon of baking powder 1/2 teaspoon of baking soda 1/2 teaspoon of salt 1 cup of chopped dried apricots 3/4 cup of mashed, ripe bananas 1/2 cup of milk 1 large egg 1/4 cup of melted butter powdered sugar |

Preheat oven to 350ºF. Sift the dry ingredients together. Add the apricots. Combine remaining ingredients and add to dry ingredients, stirring just until well blended. Turn into a 9x5 glass loaf pan that has been greased and lined with wax paper. Bake at 350ºF. for 1 hour or until done. Cool in pan for 10 minutes, then turn out on wire rack. Sprinkle with powdered sugar. Yield: 1 loaf.
