Oat Bran Muffins
1 1/4 cups of oat bran hot cereal, uncooked
2 tablespoons of firmly packed brown sugar
1/2 teaspoon of baking powder
1/8 teaspoon of salt
1/4 cup plus 2 tablespoons of skim milk
1/4 cup of frozen egg substitute, thawed
2 tablespoons of honey
1 teaspoon of vegetable oil
vegetable cooking spray
Combine first 4 ingredients in a large bowl; make a well in the center of
mixture. Combine milk and next 3 ingredients; add to dry mixture, stirring
just until dry ingredients are moistened. Spoon into muffin pans, coated
with cooking spray, filling 3/4 full. Bake at 425ºF. for 15 minutes,
or until golden. Yields 6 muffins.
