| Orange-Walnut Muffins
1 cup of flour + 2 tablespoons 2 tablespoons of brown sugar 1 1/2 teaspoons of baking powder 1 teaspoon of lemon rind, grated 1/2 ounce of walnuts; chopped a pinch of salt 1/2 cup of orange juice 2 tablespoons of margarine, melted & cooled 1 large egg |

Preheat oven to 375ºF. In a medium bowl, stir together flour, sugar, baking powder, lemon rind, walnuts and salt. In small bowl, mix together orange juice, margarine and egg. Add to dry ingredients, mixing with fork until just combined; do not over-mix. Spray six 2 1/2 inch muffin cups with nonstick cooking spray; divide batter evenly among the cups. Bake 20 to 25 minutes, or until golden brown. Makes six servings.
