Molasses Pecan Bread

3 cups of all purpose flour
1/3 cup of packed brown sugar
1 tablespoon of baking powder
1 teaspoon of ground cinnamon
1/2 teaspoon of salt
1/4 teaspoon of baking soda

2 eggs, beaten
1 cup of milk
1/2 cup of molasses
1/4 cup of cooking oil
1/2 cup of chopped pecans

In a large bowl stir together thoroughly the flour, brown sugar, cinnamon, salt, and baking soda. Stir together the eggs, milk, molasses, and oil, add to dry ingredients, mixing just enough to blend. Stir in the nuts. Turn batter into two greased 7 1/2 x 3 1/2 x 2 inch loaf pans. Bake at 325ºF. oven for 50 - 55 minutes. Remove from pans, cool on rack. Wrap and store overnight before serving. Makes 2 loaves
