Hot Chocolate, French
Style
2 1/2 (1 ounce) squares of bitter chocolate, grated
1/2 cup of cold water
3/4 cup of sugar
1/8 teaspoon of salt
1/2 cup of heavy cream, whipped
4 cups of milk
Combine grated chocolate and water in saucepan. Heat over direct heat,
beating continually for 4 minutes. Add sugar and salt. Beat and cook 4
minutes longer. Let cool. Fold in whipped cream.
To serve, place generous tablespoon of chocolate mixture in each cup. Fill
with scalding hot milk. Makes 8 small cups, 4 to 6 larger ones. |
