3 1/2 cups of cooked, drained black beans 1/2 cup of finely diced red onion 1 large tomato, seeded and diced 1 small green pepper, seeded & diced 1 medium cucumber, seeded & diced 1/2 cup of chopped parsley 1 tablespoon of chopped fresh mint |
| Combine beans with rest of ingredients. Salad Dressing 1/4 cup lemon juice 1 teaspoon cumin 1/4 teaspoon salt, or to taste 1/4 teaspoon pepper 1/4 cup olive oil Mix lemon juice with cumin, salt and pepper. Beat in olive oil.
