Carrot Balls
2 cups of sliced carrots, cooked and mashed
1 1/2 cups of soft breadcrumbs
1 cup (4 ounces) of shredded sharp cheddar cheese
1/2 teaspoon of salt
1/4 teaspoon of pepper
a dash of hot sauce
1 egg white
1 1/4 cups of coarsely crushed cornflakes
Combine carrots, breadcrumbs, cheese, salt, pepper, and hot
sauce; toss lightly.
Beat egg white (at room temperature) until stiff peaks form;
fold into carrot mixture. (Mixture may be chilled at this
stage.)
Shape mixture into 2 inch balls; roll in cornflakes. Place balls
on a lightly greased baking sheet. Bake at 375ºF. for 30 minutes
or until golden brown. Yield: 1 dozen |
