Glazed Carrots & Bananas
2 1/2 cups of diagonally sliced peeled carrots
1/2 cup of water
2 tablespoons of butter or margarine
3 tablespoons of sugar, corn syrup or honey
1 tablespoon of lemon juice
1/2 teaspoon of salt
1/4 cup of chopped parsley
2 bananas
Put carrots and water in large skillet. Bring to boiling. Cover; reduce
heat and boil gently for 15 minutes or until tender. Drain carrots and
put in bowl. Melt butter in skillet. Add sugar, lemon juice and salt;
stir until sugar dissolves. Add carrots and parsley. Cook, stirring
occasionally, until carrots are glazed. Peel bananas, cut into diagonal
slices and add to skillet. Heat. Makes 4 servings |
