Shaker Lemon Glazed Carrots
1 1/2 pounds of baby carrots, cleaned and cooked
1/3 cup of sugar
2 tablespoons of firmly packaged brown sugar
2 tablespoons of butter or margarine
2 teaspoons of lemon juice
Place whole cooked carrots in a 1 quart baking dish.
Combine brown sugar, butter, and lemon juice in a small
saucepan; bring to a boil.
Reduce heat to low, and simmer 10 minutes or until mixture is
thickened.
Pour over carrots, and bake at 450ºF. for 15 minutes.
Yield: 4 servings |
