Kidney Beans with Codfish RecipesFromScratch.com8/31/06

1/4 pound of sliced bacon
2 tablespoons of butter
2 cups of red kidney beans
2 cups of dry white wine
salt and pepper to taste
2 small bay leaves
1 1/4 pounds of cod fillets
1 egg, beaten with a little water
bread crumbs
1/4 cup of butter
1 shallot, chopped
1 hot red pepper, minced





In an earthenware or enameled iron 2 1/2 - 3 quart casserole fry the bacon in 2 tablespoons of butter. Put the dry kidney beans on top. Pour in the wine and add enough water to cover. Add salt, pepper, and bay leaves. Remove from heat and allow to soak for 6 hours. Bake at 350ºF.  oven for 45 minutes. Roll the fillets of cod in the egg and water, then in bread crumbs. Fry in the 1/4 cup of butter until nicely brown. Place on the beans and sprinkle shallot and pepper on top. Serves 4
