Reuben Casserole
5 cups of herb seasoned croutons
1 cup of hot water
one 8 ounce package of Swiss cheese, sliced, set aside 2 slices
6 - 9 slices of canned corn beef
1/2 cup of melted margarine
2 cups of sauerkraut, drained
1 teaspoon of caraway seeds, if desired
In a large bowl, put in croutons and margarine, toss gently. Add
hot water, sauerkraut and caraway seeds. Set aside 1 cup of mixture. Grease
casserole dish. Layer crouton mixture, corn beef and cheese slices. End up
with the 1 cup of croton mixture. Cover and bake in a 350ºF. oven for 20
minutes. Top with the 2 cheese slices and bake uncovered 10 minutes until
cheese melts. |
