Bleu Cheese Coleslaw
3 Tart green apples; cored, about 5 cups 3 cups of thinly sliced cabbage 1/4 pound of Bleu cheese; crumbled 1 cup of sour cream 3 tablespoons of grated cheddar cheese 1 1/2 tablespoons of thinly sliced green onion; 1 1/2 tablespoons of fresh lemon juice 1 tablespoon of chopped chives 1 tablespoon of Red wine vinegar 1 teaspoon of salt 1/2 teaspoon of freshly ground pepper
