Date-Nut Roll Cookies
2 cups of brown sugar
1 cup of shortening
3 eggs, well beaten
4 cups of enriched flour
1/2 teaspoon of salt
1/2 teaspoon of baking soda
Filling
Filling ingredients:
2 packages (8 ounces) of dates, chopped
1 cup of sugar
1 cup of water
1 cup of chopped pecans
1/4 cup of chopped candied cherries
1/4 cup of chopped candied pineapple
To make filling:
In a saucepan, cook dates, sugar, and water over low heat for 10
minutes. Stir in nuts, cherries, and pineapple; let cool.
To make cookies:
In a large bowl, cream sugar, shortening, and eggs; set aside. In
another bowl, sift together flour, salt,
and baking soda. Blend into creamed mixture and mix well. Divide dough
into 4 parts; roll each out to
1/4 inch thickness, and spread filling over all. Roll up each part, wrap
in wax paper, and chill in
refrigerator several hours. Cut in 1/4 inch slices and bake on a
ungreased cookie sheet in a preheated 375ºF. oven for 12 minutes. Makes
about 3 dozen cookies.
