Pecan Butter Ball Cookies
1 cup of butter, softened
1/2 cup of powdered sugar
1/2 teaspoon of vanilla
1 3/4 cups of all-purpose flour
1/2 cup of chopped pecans
In a large mixing bowl, cream butter and sugar until light and fluffy.
Blend in vanilla. Gradually add
flour; blend well. Stir in nuts. Cover and chill until firm. Shape dough
into 1 inch balls. Place on a
greased baking sheet. Bake at 350ºF. for 20 minutes or until
golden brown. Remove from baking sheet to a wire rack to cool. Makes
about 3 dozen cookies
