Pinwheel Cookies
3/4 cup of vegetable shortening
1 cup of sugar
2 eggs
1 teaspoon of vanilla
2 1/2 cups of all-purpose flour
1 teaspoon of baking powder
1 teaspoon of salt
2 squares (1 ounce each) of unsweetened baking chocolate, melted and
cooled
In a large mixing bowl, cream shortening and sugar until smooth. Blend
in eggs and vanilla. Stir together
flour, baking powder, and salt. Gradually add dry ingredients to creamed
mixture; blend well. Divide dough in half. Blend chocolate into one
half. Cover and chill both doughs until firm. Roll each dough in a 12 X
9-inch rectangle. Place chocolate dough on top of plain dough.
Roll to about 1/4 inch thick. Roll up doughs from the long side. Wrap in
plastic wrap and chill until firm. Cut in 1/8 inch slices. Place on an
ungreased cookie sheet. Bake in a preheated 400ºF. oven for 8 to 10
minutes or until set. Remove from baking sheet to a wire rack to cool.
Make about 7 dozen cookies.
