Coffee Sparkles RecipesFromScratch.com8/26/06

1 egg white
1/2 cup of sugar
1 tablespoon of instant coffee
1/4 teaspoon of salt
1/4 teaspoon of cinnamon
2 cups of shelled nuts (walnuts, pecans, blanched almonds or peanuts)

Beat the egg whites until foamy, blend in sugar, instant coffee, salt and cinnamon. Stir in nuts and coat well. Lift out, a few at a time with fork, hold over bowl to drain, place without touching each other onto a buttered cookie sheet,  and bake at 325ºF. for 20 minutes or until golden. Cool and store in airtight containers.
