Peach Crepes 2

Filling:
6 large peaches, pitted and diced into 1/2 inch pieces
3 tablespoons of Grand Marnier
5 tablespoons of sugar
1/2 cup of fresh blueberries
3 tablespoons of fresh orange juice
grated zest from 1 orange
prepared crepes



Mix all ingredients. Cover and let flavors marinate at least 30 minutes. Preheat oven to 400ºF. Butter a shallow casserole dish. If crepes have been chilled, allow them to return to room temperature. Place  2 tablespoons of marinated fruit, drained, off enter in each crepe and fold into quarters or roll into cylinders. Arrange seam side down in prepared casserole. Spoon remaining marinade over crepes. Bake 10 minutes. Remove from oven and sift powdered sugar over. Place under broiler 2 to 3 minutes to brown sugar, watching carefully to avoid burning.
