Peach Crepes w/Easy Grand Marnier Sauce
1/2 cup of low fat plain yogurt
1 tablespoon of maple syrup or honey
3 fresh peaches, peeled and sliced

Grand Mariner Sauce
3/4 cup of orange juice
1 tablespoon of cornstarch
3 tablespoons of Grand Mariner or other orange liqueur or Drambuie
Sliced peaches, blueberries, or other fresh berries
Grand Marnier Sauce: In a saucepan, combine the orange juice with
cornstarch; whisk until smooth. Cook over medium heat, stirring
constantly, until mixture thickens and comes to boil, simmer for 2
minutes. Remove from heat and stir in liqueur.
In a bowl, combine yogurt with syrup or honey, stir until smooth. Add
peaches and mix lightly. wrap crepes in paper towels and heat in
microwave at high (100%) power for 30 seconds. Or heat in 350ºF. oven
for 5 to 10 minutes or until warm.
Spoon some peach mixture onto each crepe, roll up and place on
individual plates. Drizzle with warm sauce and garnish with fresh fruit.
Makes 8 crepes, 4 large or 8 small servings
Variations: Jiffy Peach Dessert: Sweeten yogurt with maple syrup and
spoon over sliced peaches.
