Apple Streusel Cake
1 cup of milk, lukewarm
1 package of active dry yeast
2 teaspoons of sugar
3 1/2 to 4 cups of flour
1/4 cup of sugar
1/4 teaspoon of salt
1/4 cup of butter or margarine, melted and cooled to lukewarm
1 teaspoon of vanilla
3 1/2 cups of peeled, thinly sliced cooking apples
1/2 cup of of slivered almonds
1/2 cup of golden raisins
1 teaspoon of cinnamon
1/8 cup of sugar
Into a small bowl, pour lukewarm milk. Add yeast and 2 teaspoons sugar,
stirring until dissolved; set aside for 5 minutes. Into a large bowl, sift
flour. Make a hollow in the center and add 1/4 cup sugar, salt, butter,
vanilla, and the yeast mixture. Mix well. If the dough is sticky, add flour,
but the dough must remain moderately soft. Place dough on a lightly floured
board and knead until smooth. Place dough in a greased bowl; turn once to
grease lightly. Cover and let rise 45 minutes or until doubled in bulk.
Punch down dough. Pat into greased 9 X 13-inch cake pan. arrange apple
slices on top of dough. Cover and let rise 45 minutes or until doubled in
bulk. Sprinkle top with almonds, raisins, cinnamon, and 1/8 cup of sugar.
Bake in a preheated 375ºF. oven 20 to 30 minutes or until golden
brown. Remove from pan; cool on wire rack. To serve, cut into 2 X3-inch
strips. Makes one 9 X 13-inch cake.
