Cowboy Cake

2 cups of brown sugar
2/3 cup of shortening
2 eggs
1 cup of buttermilk
2 1/2 cups of flour
1 teaspoon of soda
1 teaspoon of cinnamon
1 teaspoon of nutmeg
2 teaspoons of baking powder
1/2 teaspoon of salt
1/2 cup of chopped nuts, optional

Sift flour with soda, cinnamon, nutmeg, baking powder and salt. Mix brown sugar and shortening until mixed and crumbly. Set aside 1/2 cup for topping. add eggs, buttermilk and flour mixture to remaining sugar and shortening. Mix thoroughly. Pour into greased and floured large loaf pan and bake at 350ºF. until done. Test with cake tester.
