Homemade Honey Cake
cake ingredients:
1/2 cup of sugar
1/2 cup of butter or margarine
2 eggs
1/2 cup of honey
3/4 cup of milk
1 teaspoon of almond flavoring
2 cups of flour
2 1/2 teaspoons of baking powder
1/2 teaspoon of mace
1/2 teaspoon of salt
Honey Nut Topping
whipped cream
Honey nut topping ingredients:
1/3 cup of honey
1/2 cup of chopped nuts
1/4 cup of brown sugar
1/2 teaspoon of cinnamon
1/4 cup of butter, softened
To make topping:
Mix together all ingredients and spread on hot layers.
To make cake:
In a large bowl, cream sugar and butter. Add eggs, one at a time, beating
after each addition. Beat in honey; set aside. In a small bowl, combine milk
and almond flavoring; set aside. In another bowl, sift together flour,
baking powder, mace, and salt; add to creamed mixture alternately with milk,
beating well after each addition. Pour batter into two greased and floured
8-inch round cake pans. Bake in a 350ºF. oven 35 minutes. Spread
layers with Honey Nut Topping and bake about 5 minutes longer. Cool; remove
from pans. Stack layers and frost with whipped cream. Makes 1 8-inch cake
