Spice Layer Cake w/Coffee
Frosting
one 18.5 ounce 97% fat free yellow cake mix
3 egg whites
1 3/4 cups of water
1 cup of fat free mayonnaise
1 teaspoon of ground cinnamon
1/2 teaspoon of ground allspice
1/2 teaspoon of ground ginger
1/8 teaspoon of ground nutmeg
Vegetable cooking spray
Coffee Frosting
Combine the first 4 ingredients in a large mixing bowl; bat at
low speed with an electric mixer until blended. Add cinnamon and
next 3 ingredients, and beat at high speed for 2 minutes. Pour
batter into two 9 inch round cake pans coated with cooking spray.
Bake at 350ºF. for 25 to 35 minutes. Cool in pans on wire racks
10 minutes. remove from pans and cool completely on wire racks.
Spread Coffee frosting between layers and on op and sides of
cake.
Yield 12 servings

Coffee Frosting
1 1/2 cups of firmly packed brown sugar
1/2 cup of water
1/8 teaspoon of cream of tartar
1 teaspoon of instant coffee granules
3 egg whites
a pinch of salt
Combine the first 3 ingredients in a heavy 2 quart
saucepan. Cook over medium heat until mixture begins to
boil and sugar dissolves, stirring often. Cook until
mixture reaches soft ball stage or candy
thermometer reaches 240, stirring often. Remove mixture
from heat, and add coffee granules, stirring until
granules dissolve. |
Beat egg whites at medium speed with an electric mixer
until foamy. Continue to beat, slowly adding syrup mixture in a
thin stream.
Add salt, and beat at high speed until stiff peaks form and
frosting is thick.
Yield: 4 cups
