Tube Spice Cake
3/4 cup of butter
2 cups of raw sugar
3 eggs
3 cups of buckwheat flour
2 teaspoons of baking powder
1/2 teaspoon of baking soda
1 teaspoon of cinnamon
1 teaspoon of nutmeg
1 teaspoon of ginger
1 teaspoon of ground cloves
1/2 cup of grated Brazil nuts
3/4 cup of buttermilk |

Preheat oven to 350ºF. Oil a tube pan and
sprinkle in a little flour. Turn pan upsides down and shake out excess
flour. Beat butter and sugar until light and fluffy. Add eggs and beat about
1 minute. Combine all dry ingredients. Add alternately with the buttermilk
to the wet ingredients. Beat until light and fluffy. Pour into pan and bake
about 1 hour, until center springs back or toothpick comes out clean.
