| Lime Cheesecake
1 cup of shredded coconut 2 tablespoons of flour 2 tablespoons of margarine, melted 1 envelope of unflavored gelatin two 8 ounce packages of cream cheese 3 eggs, separated 3/4 cup of sugar 1/4 cup of lime juice grated lime juice grated lime rind green food coloring, optional 1 cup of whipping cream, whipped |

Combine the coconut, flour and margarine, press into a 9 inch springform pan. Bake at 350ºF. for 12 = 15 minutes. Soften gelatin in 1/4 cup of cold water. Soften cream cheese. Combine egg yolks, 3/4 cup of water and sugar in saucepan, cook, stirring constantly, over medium heat for 5 minutes. Stir in gelatin until dissolved. Add gelatin mixture gradually to cream cheese, mix until blended. Stir in lime juice, 1 teaspoon of lemon rind and several drops of green food coloring, if desired. Fold in whipped cream and stiffly beaten egg whites, pour over crust. Chill until firm. Garnish with lime rind Serves 10 - 12
