Two-Cheese Cheesecake 8 ounces light cream cheese 1 cup low-fat ricotta cheese 2 eggs, separated 1/4 cup honey 1/4 cup golden raisins 3 tablespoon cornstarch 1 tablespoon grated orange rind 1/3 cup graham cracker crumbs |

Instructions:
In a large bowl, stir the cream cheese and ricotta until smooth. Stir in the egg yolks, honey, raisins, cornstarch and orange rind, mixing until thoroughly combined. In a medium bowl, whip the egg whites for about two minutes, or until they form soft peaks, then fold them into the cheese mixture. Coat a 9-inch pie plate with non-stick spray and cover with the graham cracker crumbs, then pour in the cheese mixture. Bake at 400ºF. for 30 minutes, or until golden and set. This recipe yields 12 servings. Nutritional Information Per Serving: 121 calories; 5.2 g fat (37 percent of calories); no dietary fiber; 47 mg cholesterol; 126 mg sodium.
