Refrigerator Cheesecake
1 Recipes for Special Crumb
Pastry
2 tablespoons of unflavored gelatin
1/2 cup of cold water
2 eggs
1 teaspoon of salt
1/2 cup of sugar
1/2 cup of milk
2 cups of cottage cheese, sieved
1 lemon, grated peel and juice
1 teaspoon of vanilla
1 cup of heavy cream, whipped
Mix Special Crumb Pastry, line pan and chill as described in recipe.
Soften gelatin in cold water about 5 minutes/ Beat egg yolks in lightly.
Combine with salt, sugar, and milk in top of double broiler over hot
water. Stir until sugar is dissolved. Cook, stirring constantly until
mixture thickens. Remove pan from hot water. Add gelatin and mix well to
dissolve gelatin. Place pan in cold water to cool. Mix in cheese, lemon
peel and juice, and vanilla.
Whip egg whites until they stand in stiff points when beater s removed.
Whip cream stiff. Fold cheese mixture into egg whites and cream. Pour
into chilled crumb lined pan. Scatter the remaining crumbs from
pastry recipe in border around cheese or evenly over top. Chill until
set. Makes 6 to 8 servings. |
