Fresh Cherry Pie
4 cups of cherries, wash, pit and pick over
1 1/3 cup of sugar
4 tablespoons of flour
2 teaspoons of quick cooking tapioca
2 drops of almond extract |

Combine all ingredients except cherries, then sprinkle mixture
over cherries and let stand for 15 minutes, Mix well and put in
unbaked 9" pie crust. Dot with 1 tablespoon of butter. Cover with
lattice or whole crust. Bake at 450ºF. for 10
minutes. Reduce heat to 350ºF. and bake about 30 minutes or until
golden brown.
