Swedish Cream Wafers

Cookie:
1 cup of soft butter
1/3 cup of thick cream
2 cups flour, sifted
1 cup of granulated sugar

Filling:
1/4 cup of soft butter
3/4 cup of sifted confectioner's sugar
1 egg yolk
1 teaspoon of vanilla

Instructions:

Mix well the butter, cream, and flour. Chill. Heat oven to 375ºF.  Roll out a section of the dough to 1/8" thick on floured, cloth-covered board. (Roll only 1/3 of the dough at a time, keeping the rest refrigerated until ready to roll.) Cut dough with 1 1/4" cookie cutter. Transfer cuttings to a piece of waxed paper that is heavily covered with granulated sugar. Turn each cutting with spatula so that both sides are coated with sugar. Place on ungreased baking sheet. Prick with fork about four times. Bake 7 to 9 minutes. Blend together filling ingredients. Put 2 cookies together, with filling between them. Makes about 5 dozen cookies
