Snickerdoodles 2

1/2 cup of margarine
1 1/2 cups of all purpose flour
1 cup of sugar
1 egg
1/2 teaspoon of vanilla
1/4 teaspoon of baking soda
1/4 teaspoon of cream of tartar
2 tablespoons of sugar
1 teaspoon of ground cinnamon 

Snickerdoodles

Preheat oven to 375ºF.  In a mixing bowl neat the margarine with an electric mixer on medium to high speed for 30 seconds. Add about half of the flour, the 1 cup of sugar, egg, vanilla, baking soda and cream o tartar. Beat until thoroughly combined. Beat in remaining flour. Cover and chill 1 hour. Shape dough into 1 inch balls. Combine the 2 tablespoons of sugar and the cinnamon. Roll balls in sugar cinnamon mixture. Place 2 inches apart on an ungreased cookie sheet. Bake in a 375ºF.  oven for 10 - 11 minutes or until the edges are golden. Cool cookies on a wire rack. Makes about 36
