Fried Ribbon Cookies
4 eggs
1/4 cup of sugar
3/4 teaspoon of salt
1/4 cup of butter, melted
2 3/4 cups of sifted flour
2 teaspoons of anise extract
2 teaspoons of water
Oil for frying
Confectioners' sugar, to sprinkle
Beat eggs in bowl until thick and lemon colored. Gradually add sugar
and salt; beat until sugar is dissolved. Stir in butter.
Add half the flour to egg mixture; blend well. Stir in anise extract
and water. Add remaining flour to make stiff dough; refrigerate for
15 minutes.
Divide dough into 5 or 6 parts. Roll out one part at a time on
lightly floured board until dough is nearly transparent. With pastry
wheel, cut dough into strips 1 inch wide and 6 inches long. Roll
strips very loosely over first two fingers. Slip rolled strip onto
tines of large meat fork.
Heat oil to 365ºF. in deep skillet. Place dough ribbon in hot oil.
As soon as dough rises to the surface, it will begin to unroll. As
soon as it unrolls, twist it back into a roll again with a meat
fork. Hold dough loosely against side of pan for a minute or two
until dough sets. Brown lightly on both sides. Drain on paper towels
and sprinkle with confectioners' sugar. Makes 10 dozen
