Peanut Meringues
2 egg whites 2/3 cups of sugar 1 1/2 cup of low sodium corn flakes 1/2 teaspoon of vanilla extract 1/2 cup of chopped dry roasted peanuts |

Beat egg whites until soft peaks form. Add sugar, a teaspoon at a time until stiff peaks form. Beat in vanilla. Fold in corn flakes and nuts. Drop mix by teaspoon onto an ungreased baking sheet. Bake at 250ºF. for 25 minutes. Remove from sheet. Makes 4 dozen at 25 calories each.
