Carob Ice Cream
1 cup of carob powder
2 cups of evaporated milk
2 cups of honey
1/2 teaspoon of salt
3 eggs, beaten
4 cups of heavy cream
2 tablespoons of vanilla extract or ground vanilla beans |

Heat milk over boiling water. Add carob powder and
beat with electric beater until well blended. Combine honey and salt. Mix
well. Gradually add to the carob mixture and cook until thickened, stirring
constantly. Continue to cook for 5 minutes more. Add eggs, stirring
vigorously. Cook 2 minutes longer, stirring all the while. Cool. Add cream
and vanilla. Pour into ice cream maker can and freeze, using 8 parts ice to
1 part salt.
