Ice Cream Sandwiches
32 graham cracker squares
2 tablespoons of milk
1 tablespoons of cornstarch
1 tub of ready-to-spread frosting (any flavor)
1 1/2 cups of chilled whipping cream
Line 13x9-inch pan with aluminum foil. Arrange 16 graham crackers on
foil, cutting about 6 of the crackers to completely cover the foil. Mix
milk and cornstarch in large bowl; stir in frosting and whipping cream.
Beat on medium speed, scraping bowl constantly, for 2 minutes. Beat on
high speed until thick and creamy, scrape bowl occasionally, for 3
minutes. Spread over graham crackers in pan. Arrange remaining graham
crackers over frosting mixture, again cutting about 6 of the crackers to
completely cover the mixture. Cover and freeze until firm, about 8 hours
or overnight. Cut into 2 1/2 inch squares. Makes 15. |
