Ice Cream Gelatin Dessert

one 3 ounce package of gelatin, any flavor
1 cup of boiling water
1/2 cup of cold water
1 cup of vanilla ice cream or your favorite
1 cup of canned fruit, drained (fruit cocktail, sliced peaches or mandarin oranges)


Dissolve gelatin with  boiling water in an 8 inch or 9 inch metal pan. The pan helps the gelatin cool faster. Then remove 1/2 cup and pour into a bowl. Add 1/2 cup of cold water to the gelatin in the pan and place in the freezer until it thickens, about 10- 15 minutes.
Meanwhile, add1 cup of ice cream to the gelatin in the bowl, stir until smooth. Remove thickened gelatin from the freezer and if desired, stir in fruit, reserving a few pieces for garnish. Spoon thickened gelatin and fruit into individual dessert glasses. Top with ice cream/gelatin mixture. Chill for 30 minutes. Garnish and serve. Serves 5
