Mutti's Chocolate Mousse
Mousse au Chocolat
1/2 pound of cake Baker's bitter chocolate
1/2 cup of sugar
1/2 cup of water
5 eggs
1 teaspoon of vanilla
1/2 teaspoon of pulverized coffee
Combine the chocolate, sugar, and water in upper part of 1 quart double
boiler over hot water. Stir until smooth. Set aside to cool, stirring
occasionally. Beat egg yolks. Add vanilla and coffee. Stir into
chocolate mixture which should not be too smooth.
Whip egg whites until they stand in points when whip is removed. Blend
gently into chocolate egg mixture. Spoon into individual mousse or
custard cups. Chill. Makes 6 to 8 servings, depending on size of cups.
Serve with whipped cream or plain, since this mixture is very rich. |
