Blackberry Pie
1 cup of honey
1/4 cup of unbleached flour
1/2 teaspoon of cinnamon
1/2 teaspoon of grated lemon peel
1/4 teaspoon of nutmeg
5 cups of fresh blackberries
pastry for 2 crust pie
1 tablespoon of butter |

About 2 hours before baking or early in the day
combine the first 6 ingredients in a large bowl and let stand. Preheat oven
to 425ºF. Roll out half of the pastry and line a pie plate.
Spoon the filling evenly into the crust, dot with butter. Prepare the top
crust, making a decorative edge. Bake for 50 minutes or until golden.
