Cherry Oatmeal Cobbler

one 16 ounce package of frozen unsweetened pitted tart red cherries, thawed
3/4 cup of sugar
1 tablespoon of cornstarch
1 tablespoon of butter or margarine
1/4 teaspoon of almond extract
1/3 roll of refrigerated oatmeal cookie

Drain the cherries, reserving juice, set cherries aside. If needed, add water to juice to make 1/2 cup. In a saucepan, combine sugar and cornstarch, stir in juice. Cook and stir over medium heat until thick and bubbly: stir in reserved cherries, butter and almond extract. Heat and stir until bubbly. Cut cookie dough into 6 slices. Turn hot cherry mixture into a 1 1/2 quart casserole. Top with cookie dough slices. Bake at 400ºF for about 20 minutes or until bubbly. Makes 6 servings
