Gooseberry Pie

4 cups of gooseberries
2 cups of honey
1/4 cup of arrowroot
/2 teaspoon of cinnamon
1/4 teaspoon of salt
pastry for 2 crust pie

About 2 hours before baking or early in the day. If gooseberries are large, slice in half. In a medium bowl combine honey, arrowroot, cinnamon and salt, add gooseberries and toss well. With a slotted spoon, mash the berries so that all the honey mixture is moistened. Let stand while preparing pastry. Preheat oven to 400ºF. Roll out half of the pastry and line the pie plate. Spoon gooseberry filling evenly into the crust, dot with butter. Prepare the top crust. Bake 10 minutes, turn oven temp to 325ºF. and bake for 1 hour more or until the pastry is golden. During the last 15 minutes or so of baking, place a sheet of foil just below the shelf with the pie to catch any drippings.
