Key Lime Pie 1 1/2 cups Graham cracker crumbs 2 tablespoons Sugar 4 tablespoons Margarine; melted FILLING 1 1/2 cups Sugar 1/3 cup Cornstarch 1/4 teaspoon Salt 4 Eggs 2/3 cup Key lime juice 1 teaspoon Grated lime rind 2 tablespoons Margarine |
| In a med. bowl combine graham cracker crumbs, 2 tablespoons of sugar and 4 tablespoon melted margarine. Press into bottom and sides of a greased 9" pie pan. Chill for 15 minutes. Meanwhile in a med. saucepan, stir in remaining sugar, cornstarch and salt. Whisk in eggs and 1 cup of water. Over med-low heat, bring to a boil 1 min., stirring constantly or until mixture thickens. Remove from heat and stir in juice, peel and remaining margarine. Pour into prepared pie shell. Refrigerate 2 hours or until firm. Garnish with whipped cream if desired.
