Lime Party Pie

Meringue:
3 egg whites
1/4 teaspoon of cream of tartar
1/8 teaspoon of salt
3/4 cup of sugar
Lime filling:
3 egg yolks
1/4 cup sugar
4 tablespoons of bottled lime juice
1 cup of cream, whipped
a few drops of green food coloring

Beat egg whites until foamy, and add cream of tartar and salt. Beat until stiff, but not dry. Add sugar gradually, beating until very stiff. Place this meringue mixture into a 7" aluminum pie plate. Mold to make depression in center of pie, leaving slightly higher higher rim around the edge. Bake at 275ºF.   for one hour. Cool For the filling, beat egg yolks, and add sugar and lime juice. Cook mixture in double boiler, stirring constantly until thick. Remove from heat and chill. Whip cream until thick and add lime mixture. Tint filling with small amount of green coloring. Place filling over meringue in pie shell. Serves 6
